For my lunch today I had a lovely roasted vegetable salad comprising spring onions, peppers, tomatoes, whole bulb fennel, squashed garlic cloves, finely chopped chilli, red onion, and borlotti beans, with a good glug of olive oil over.
All roasted in the oven for 20 or so minutes to intensify the flavours, then turfed out into a 'Lock n Lock' container.
Please post your ideas.

Roasted vegetable and or meat cous cous is a winner for me. Only when it's cold it can be cloying so best at room temp or hot.
That or rice or noodles with veg or meat seasoned with the usual bunch to make it savoury, sweet, hot and a little sour.
There is nothing worse than a British bad sandwich witnessed in offices all over the land.
How do these people manage daily on their ham and cheese creations?
