Where can I go and park up near the runways, where it will be really close to the planes landing/taking off?

You'll be lucky see both from many other places if both runways are on the go.

You could sit in Wythenshawe to watch them land (lock your doors)
Or Tatton Park to take off but they get high quick.

You can park on the road that's pretty much at the end of the runway, and have planes go right over your head. I was there on Saturday. It's easy enough to see on Google maps.

Also from walking around the back of the hotel you can get very close to the runways, although you've got to be careful you don't end up where you're not meant to be...

Ring way road can be a good one, but when i drove past the other day the roadworks appear to have been extended, stopping you from parking.
There are some roads/paths that take you up to the perimeter fence where you can get some great pictures though.

Park at the junction of Moss Lane and the old Altrincham Road in Styal, then walk down Altrincham Rd (closed to traffic now).

You'll get to the south side with views right across the apron. If 24L is being used for take offs (busy times) then they will taxi right in front of you.

This is where I regularly go. Cheaper than the high fees they charge you to go to the visitors park

This is where I regularly go. Cheaper than the high fees they charge you to go to the visitors park
+1 used to regularly see spotters sitting here watching when I used to operate out of Manchester.

Then there is always the airport pub on Ringway road. A bit dingy but a large beer garden very close to the action when on westerlies. Beer is cheap though which is a bonus.
