Yams - what to do?

Bought a yam the other day (mahooosive fker it was too!), problem now is what to do with it. We tried chipping first but TBH although the texture was fine it tasted bitter - any ideas on what to cook with it or how to prepare (yam-mash?)

What variety of Yam?. There are a few different types.

I have had it simply peeled and boiled, much as you would a potato. Another good one is roasting it, unpeeled, directly on charcoals. Obviously that one would be best saved for BBQ season.

I don't think I would try mashing it, Yams are much more fibrous than potatoes.

I used to eat fufu (pounded yams) in Nigeria. Something similar to this might work:

Serve it with stew or something. Or goats head soup for the full Nigerian experience.
