Please don't ask why, but here in France people just don't get eggs unless they fall out of a chicken's bottom. our local farmer raises turkeys, ducks, geese et al for Xmas, and the new intake have started to lay - so when I buy our dozen fresh eggs each week - for £1.60 - he gives me six turkey eggs just to get rid of them. Soon it'll be the duck eggs "because the French find them too rich" and again we'll be given their eggs. Bizarre isn't it? That's quite a large hen's egg in the middle for reference.


I expect there are a few reasons turkey eggs aren't popular...
1) Turkeys are not as prolific at laying eggs as chickens.
2) Turkey eggs are just too big, and regular hens eggs are the perfect size (easy to cook the way you want)
3) It's probably more economical to hatch the egg and grow a turkey, because you get a lot more meat than you would from a chicken.

It's the third week running they have given me a half dozen and they make a most delicious omelette or scrambled egg. If I am doing a boiled egg, I give four minutes for a duck egg, about 2.5 (boiled from cold) for the turkey egg. And since they are free range the yolks are really a lovely deep yellow and rather tasty with it.
