Can't recommend anyone local but for mine we took a trip down to Swansea.
A mohair roof with zip-out plastic window was c.£250 fully fitted.
Vinyl roofs also available and he can supply glass rear windows or use your current one.
Will also supply DIY roofs on request.
He'll make and fit a roof in the day - time for a stroll along the beach and lunch near the harbour.
Having worked in the rag trade for years I can vouch for the quality of workmanship.

A lot of people mentioned Jack Smith for fitting to me, although if I remember correctly you have to supply the roof? I ended up not going it done in the UK as ran out of time. Thank goodness for that as someone cut a hole in the roof while driving back! So got it done here in Norway, and it's been done ok but not perfectly.
However I got a Robbin's cloth top with heated glass window from GoMiata in the US. The wind de-ices very very quickly, and the roof looks a lot tidier due to the lack of seams. It's also really flexible compared to the old vinyl roof for putting up and down in the cold. You also get the free rain rail.

What it looks like on the car (the rear window should sit a little more vertical, due to the bad fitting I moved the second bar at the rear a bit after the photo was taken):

I had mine fitted by Hot Hoods last April. Cost me £300 for a vinyl roof with plastic rear window.
Others have said I should have gone for mohair/glass rear screen, but the roof is barely up, so saw no point!
Really pleased with the service, took him no time at all to do it, no leaks and fits really well.
