Bangernomics dilemma...

I've recently broken my bangernomics virginity with the purchase of a 175k 15 year old 6 cylinder german estate for £500 that has just sailed through its MOT and I'm correspondingly delighted, but, I have a dilemma. The options...
Option 1:
Bangernomics says I should enjoy 12 month's motoring for as little expenditure as possible.
Option 2:
I have an impending trip to Germany and could purchase a suitable leather interior from ebay.de for around £250 which would make the car an even nicer place to be, install more pride of ownership (it could use a little rust repair) and should the car die, no doubt be saleable for similar money.
Option 3:
As a wildcard, I've been offered a CAT D identical vehicle (it has 6 damaged body panels after a shunt) that has a leather interior (although not in such great shape) for £200. This car has 50,000 miles less. As I have the space I'm considering purchasing this vehicle, putting the interior into the 175k car, stripping all the easily stripped items (clean panels, lamps, dashboard parts, wheels, etc), paying to have the engine and gearbox removed (which I have space to store as spares for the 175k car) then scrapping it.
Option 1 seems to make sense for lack of PITA. Option 2 feels easy and convenient. Option 3 makes Option 2 seem like an indulgent waste of money
I've had really low depreciating cars in the past that have been 'good cars' because of the low cost of ownership. This however is a brand new world and I'm interested in the collective opinions...
