You may struggle.

Exhuast being centre mounted leaves little room for a tow bar.

I don't think they have a "towing weight" so I believe it would be illegal to tow anything with one anyway.

The standard MINI has a towing weight though and I have seen pics online of a R56 Cooper S with towbar fitted....

I'm guessing you may need to swap to a single sided exhaust in order to have a tow bar.

Doesn't matter. If that model of car has no towing weight rating it is illegal to use it for towing. It could be used for a bike carrier but not any kind of trailer. Whether you would actually get caught for it is a different matter of course.
