Edit: It's a mk4 Mondeo...might help if I'd said that.

So the big plastic bit that's the main focus of this picture:


I'ts only attached near the grill. I can push down on it and the left hand side "clips" on to the metal beneath slightly. But the right hand side no longer does. Are there clips or something missing that should hold it on? Or do I need a new one, and if I need a new one... what is it called?

It's called a plastic cover.

Yeh I would explain it to the parts man as the plastic cover that surrounds the bonnet latch. I`m sure they can work it out.

If it doesn't rattle, just leave it. If it does, can't you secure it with cable ties..?

Something rattles. When the bonnet is open I can't hear it, the bonnet prop clips to this, and there's plenty of scuffing between the prop and the pannel so if it was relatively cheap I'd consider replacing it and find out.
