S has a few nice extras as well as a little extra power if you have the choice.I'd say choose an 2wd S over a 4wd non S although we have a 4S as we live in the sticks and use yr round sun-snow and I like the fatter behind as the 4s are wider at the rear.
Not having heated seats is a deal breaker for us otherwise most are well spec'ed with parking sensors etc.

911V had a couple of manual Gen 2s for months when I was looking. PDK cars were selling quickly at the time.
PSE is nice to have, but hardly a deal breaker. Just not as good as on the earlier or later cars.
Opinions of spec seem to vary. Aside from the nav I can't see anything you really must buy a car with. You might want to work out whether you'd like a SPASM chassis, as some of the manuals had that. Work out which seats you like.
