It's my wife's first Mother's Day with our son, and I want to make it really special. The reason is she is a bit up and down at the moment as her mother passed away just before our son was born making it a really stressful pregnancy for her plus I just want her to have a great day.

Anyway the sob story over, what can I make that looks great and is relatively easy. I'm ok with the pots and the pans but would prefer something easy. Also got a fantastic butcher I use, so want it meat based.

Ask the butcher to knock you up some chicken paupiettes.

These look great and are easy to cook (just bung in oven). Serve up with steamed vegetables.

That's has just reminded me of a dish I use to do with chicken thighs. Debone, add a decent pate, role and then cook in oven. Then add a nice cream, mushroom and brandy sauce.
