Road legal track/ race prep?

I've decided to do try and some amateur motorsport and trackdays( hillclimbs, autotesting etc)
I'm going to use my Fiat Seicento Sporting as they are pretty capable, proven, cheap and great fun.
What I would like to know is..
1. Having removed the rear seats/ belts etc I've been told it could fail an MOT?!
Sounds ludicrous to me, anyone know the definitive answer?
2. In the same vain Re: MOT's, am I able to change the steering wheel as it has an airbag and also an airbag warning light?
So far I've stripped the interior and tbh I'm amazed at the difference already! the rear suspension was raised over an inch!?
Any recommendations and/or experiences welcome
