Buying without a V5?

Never done it before, but what are the pitfalls?
Car I'm looking at seems to tick all of the boxes, the only one it doesn't is that it isn't really a drive there and back in one day job.
The other snag is that its on a private plate at the moment that the owner is keeping, so his V5 is away - initially I said I'll wait till it come back, but from looking at mine with the big "THIS IS NOT PROOF OF OWNERSHIP" on it, is buying without a V5 actually a risk?
I buy the car, drive it away on his plate, once he gets the new V5, tax MOT etc. he posts them to me - is there a big risk involved? May be a bit of a pain for me having to insure two plates, but not the end of the world I guess...
The HPI comes back clear on the private plate, should he know the new plate (I guess so I can HPI that too), or will the DVLA make up a new one? I suppose the only alarm bell ringing is that he has cloned someone elses plate (who has the same model and colour of car) and the car is dodgy?
Am I all round safer waiting until the new V5 comes back? I suppose the correct answer is to drive it, put down a deposit and wait for the paperwork so noone else buys it, but I can't really justify two weekend trips at the moment.

The V5 could be with a logbook loan company....
Or with the owner that's had it stolen...The V5 could be with a logbook loan company....
Or the owner of the car that the number plate actually belongs to, in an attempt to cover up the above.
I have walked away from cars before that have a V5 because they were highly suspicious. The last one was an A4 a mate was considering buying, pictures in the advert didn't match the address we viewed at, which was not the same as the one on the V5, or indeed where the pictures were taken. The V5 said he had owned it for a year, the HPI check said 6 weeks. The number plates had screw holes in, but were stuck on with adhesive pads, etc, etc.
yes, the V5 is not proof of ownership, but I wouldn't ever buy a car without it, its the first thing I do, check its numbers against the car.
