I am soon to be attempting a long multi-day tour and have bought a High5 2:1 for drinking whilst cycling.
What confuses me is the Carbohydrate thing, I read that the body struggles to take on more than 60g of carbohydrates per hour.
So does the drink, which provides at least 60g per hour, replace all food? or do I drink more water and eat food topping up with High5 every now and then?

The latter.

Mid it up between drink gels and bars but yes 60-80g per hour is about the most you can use apparently.

My advice to you is use it daily before you go. Even if you ate not riding use a little abd build it up. When your body isn't used to energy drinks and can upset your stomach.
