Predicatble and boring Sunday Roast

In line with a good number of the populous my Sunday fayre has become a bit boring.
Most weeks Glocko's gourmet galley rustles up a tasty roast but I think I need a twist.
Whether it's chicken, pork & crackling, beef or lamb, the accompaniments are invariably, roasties, mash, carrots & turnip, cabbage and gravy.
What would you do different?
Today I've just put a big free range chicken in the oven but think I'll serve it with cauli cheese, hasselbacks, carrot batons and make a good gravy from the carcass. That still sounds boring though!
You have 2 hours and 15 minutes at gas mark 7 to come up with alternatives!

Good roast meat can never be boring.
When it starts to get warmer I think an inexhaustible supply of french bread and a nice salad is a pretty good match for roast chicken and beef.
I like a caesar type salad with chicken and a peppery mustardy one with beef
Don't even need to arse about making gravy just mop the juices up with the bread

Cauliflower and Broccoli cheese with hickory sticks on the top , parsnips baked in orange juice , pigs in blankets ,lemon olive oil and salt the skin , homemade cranberry sauce and bread sauce, lots of wine in the gravy and on the table . Done .
