Folks, wondered if anyone had managed to get a reasonable attempt at the broth they put in Ramens at wagamama

I've had a crack with homemade chicken stock and some lime juice and a little fish sauce, but still misses that lovely sharp zing that the stuff you get in the restaurants has.

I suspect miso features quite heavily. I think I have a wagamma book somewhere, I'll see what it says.

aye its in the waga cookbook. the best thing in there is the sesame/chilli dipping sauce

Yeh, get the cookbook, we have done the Beef Ramen a while ago, form what I remember it turnt out good! loads of other good stuff in there too! incidentally, anyone know how to do Firecracker Chicken ?? its in the restaurant but not in the cookbook ? biggrin

I'd use yuzu instead of lime.

If i remember Wagamama correctly....some dishwater that previously cleaned chinese takeaway...havent eaten there in a while though.

its literally broth....

quick quick version.

2 chicken stock cubes, 1 leek finely chopped, 1 carrot chopped, 1 inch of fresh ginger root chopped, 1 litre of water.

combine, boil, cover, strain... done.

nothing at all special... for when you have more time you can use carcass of chicken instead of stock cubes, etc...

Probably that new type of Miso they make with deer antlers in Vietnam. Miso Horny smile

Did they change it ? I'm sure in the earlier days it was a traditional Japanese style chicken and pork stock.

The cook book (I have it at home) has fking hudreds of different ways to create the same broths
