Can two different people insure themselves via different policies on the same car?

Theoretically, yes.

Both need an insurable interest, it needs to be clear which policy would pay out in the event of theft, and the insurance company must permit it (too much risk of fraud for most). Practically it is usually cheaper to add the additional driver and/or get a pro rata refund on one policy, but day insurance is exactly what you describe.

I don't believe it is legal to insure a car twice. What would happen in the event of theft?
