7.5t truck for moving race car around europe

Looking for some advise for those that have done this, and apologies if its in the wrong forum but did nt know where else to put it
Current situation
We have a race car sat in Holland and will be taking it Barcelona to compete in the 24r race in Sept, up until now we have always hired a van locally in Holland, we intend to start doing more races so are throwing the idea around of buying a van or truck and keeping it in Holland with the car
The van/truck will be kept on UK plates, so taxed, insured etc, everything I have read tells me this will be fine as long as its kept legal in the UK, even though it will be kept in Europe
If we buy a 7.5t truck it will be registered for private use, so again this should not cause any issues, and no need for an O license
But the questions I am struggling with or to find consistent answers :
As the truck will be registered for private use do I have to use a tacho or manual sheet to record the drivers hours ? In the UK im sure you dont need to but what about driving in Europe, especially France ?
Is there anything I need to have driving around Europe? I can see in France you need warning triangle bulbs etc.
Any ideas on which company I can get a limited mileage european insurance
I hoping someone has done this and can give a few pointers, questions might seem dumb but I have lived in Dubai for 14 years so am very out of touch with driving regs in the UK/Europe

Well you will need to fill in a Tachograph exemption declaration form when you go for MOT anyway & you could just keep copy of that to show foreign rossers.
However arguing that with foreign-esp Spanish fuzz could be tricky, I personally would keep the tacho calibrated- can get that done when you come to uk for mot or just as easily in holland & woukd run to tacho regs.
If the racecar was once a roadcar keep the v5/reg docs with you, if pure racer from new then keep those docs with you also, the dutch police in particular really dont like a car in a truck with no reg docs of any kind.

If you start plastering the side of the truck with race team logos you would be classed as a business so you'll need an O licence, in any case if I were running abroad I think I'd run with a tachograph as arguing with foreign police can be expensive.
France is introducing an Ecotax from January and don't forget the UK also charges a road levy on commercials on top of road excise duty. Have you thought of registering it from Holland (flagging out) there are still companies that will do all the paperwork and MOT the truck in Holland.
