GTA5 racing

Clearly I'm doing something wrong. Whenever I graze, brush past or get close to anything, Be it Other people in the race, traffic or the scenery. I either stop dead or die in and enormous fireball. Fair enough, However everybody else in the race seems to be able to charge though things regardless.
Arriving at a corner, carrying good speed, missing everything and being passed by another car bouncing off everything in sight is beginning to grate a bit.

What am I missing?

What I've found makes a big difference is to let off the accelerator when going round corners and try to use as little brake as possible. This helps keep the car under control and get you round the corner with more chance to save yourself if it goes wrong.
