Cheap 3rd car insurance?

Is there any way of getting cheaper insurance for a 3rd car that wouldn't be used much. I really fancy buying a Hilux Surf around 1996 model just to go on the odd day out/ snowy days / tip runs etc, realistically wouldn't cover much more than 2000 miles per year.
I've got a quote separately with '0' years no claims , comes around the £500 mark, also tried a quote with Admiral Multi Car, with it as a 3rd car and my golf and missus' mx5 on same policy, comes at around the £400 mark, if I use my 9 years no claims on it and put '0' years on the golf it goes down to about £350 but then I can't really do that without cancelling my current policy on the golf as I can't use the 9 years no claims on both cars.
Anyone got any tips or secrets as how I could find a real cheap policy for a car I'd hardly use.

Yes. Stop looking for a regular policy.
Find a good broker. Not a price comparison site as they just don't deal with your scenario.
I've used Saffron and Adrian Flux in the past but your mileage may vary. There are many brokers. And you need a broker who understands your scenario and who can provide the right coverage.
What you want is a "mirror" or "shadow" policy that recognises your main usage (and no claims) but provides a policy that reflects your situation. I had one for an old Saab 900, it was a third car. £160 a year, 6k miles.
