Beef short rib issue...

So, last night I braised a couple of meaty beef short ribs: applied rub (of BBQ variety), seared them off, chucked in some onions, peppers, garlic and a bottle of milk stout, covered and simmered for a few hours, removed them onto a baking sheet, applied some BBQ sauce then popped them in the oven for 30 mins to caramelise off. They looked fantastic... trouble is, they are for tonight's dinner and whilst I'm confident reheating the ribs, I'm not sure what to do with what's left in the crockpot. Obviously a lot of beef fat rendered out the meat and it's very greasy, not something I would normally choose to eat so, what do I do? What sauce should I serve with them (with mash and veg at present)?
