I have been given a 5kg hind leg of venison and I am looking for ideas of what to do with it. It has not been hung so is quite fresh. I currently have it frozen in my freezer as I have no means to hang it for any length of time.

What recipies would you all recommend?

I'd bone it out and aim for a couple of steaks plus a rolled roast from the haunch; mince / diced venison from the rest. Save the bones to roast for stock.

Kitchen towels at the ready - I'm amazed at the amount of water which comes out of the meat. Any time I've had fresh venison, it hasn't been hung either, but once jointed it seems to do ok uncovered at the bottom of the fridge with kitchen towels to soak up the liquid.

There's muntjacs in the field next to my house. I'm told there's no closed season on them and 'culling' is encouraged...

We smoked one a couple of weekends ago, was very tasty but hadn't it as much meat on as expected so dried out a bit but will do again as it was a hit.
