Your oil pressure when running before was extremely good, if not a bit high. The Rover V8 is high flow rather than high pressure, you will see from other threads that the pressure varies from car to car and usually a lot lower than yours was. Be careful about running the engine for any length of time until you have checked the oil pressure, the oil pressure gauge is crap but the oil warning light should not be ignored..

It is possible the pressure relief valve has stuck open, it's a pig to get at with the pump in situ, but with a bit of swearing you can get it done. Probably the best place to start.

To check the oil pressure your going to need an inline pressure gauge and the engine will need turning over without the ignition king lead installed and measure the pressure during cranking, as long as you can get over 7 psi during cranking you should be able to start the engine briefly and check the pressure.

Thier are a lot of threads on this subject, everyone has seen oil pressure problems at some point and most are simple to rectify. Thier are also a lot of very knowledgable people who may have a better response.

The usual fix is to replace the pressure relief valve plunger with a 'tadpole'-shaped one that can't jam in the bore the way the standard one can.

There are, of course, other reasons for loss of oil pressure...
