Aircon specialists advice please!

I've just bought a used Alfa 147 and the interior smells of a combination of sick and rotten milk. I shampooed the interior to no avail.
I've realised that it must be the aircon as when it runs, it blows the smell out. Also, when I removed the factory head unit today to fit a new one, the smell emanates from the dash where the aircon evaporator is located.
I'm planning on taking it to an aircon specialist to be de odourised and have an antibacterial treatment done. If I went to a specialist, would they use products which are better than the cans of aerosol that are available to me over the counter which claim to do the same job? What would a competent aircon specialist do to properly clean, deodorise and rid my system of bacteria?
