Im not into car audio so know little on this subject but I'm going to do some work on my car over the winter, together with the engine build and want to fit some audio.
Im looking for a way to connect the oem head unit to an amplifier which I will build into the front hood and feed speakers and a sub.

Anyone know how to do this, is there a kit I can buy ?

There are some amplifiers you can buy which will accept a normal speaker input rather than a proper RCA amplifier input, this was going to be the way I tackled it (if I had kept my LP).

Would probably use the speaker out from head unit into a 3 or 5 channel amp and then run new door speakers from the amp instead of head unit as well as sub.

Wouldn't this ruin the sound quality ?

Jason, I do think it's possible looking over the following diagrams.

Use the Line outs on the C connector.

Once upon a time, but modern audio has got pretty wise to keeping OEM units without RCA outs, and they've got pretty damn good.

If there is a line out then bonus!!
