40mpg driving carefully in what circumstances? Some cars will do 40mpg at 70 on a long motorway trip that wont manage 30 on a short urban commute, no matter how carefully you drive.
Taking your fuel economy requirements to be the most relaxed possible, an E46 330i is probably the obvious suggestion. If your driving isn't all motorways you're probably going to be looking at four-pots, which somewhat limits the "sporty sounding" bit. You might find a relatively interesting sounding 3-pot to meet the criteria.

Standard Smart Roadster?
Picked mine up for £2750 with 52k miles. I get +/- 60mpg regardless of how I really drive.
It's nippy (no idea what this means, as everyone says their car is nippy),
It doesn't sound half bad considering it has a toaster in the back running a standard exhaust.
or, a motorbike.
