So after possibly/probably too much beer. What 2k funmobile can I buy on ebay and attempt to hide from SWMBO. No Mx5s.

Clio 172 sounds fun. Unfortunately I have a 1990s turbo itch. I like the turbo reality of a TT, but less the idea of a TT if that makes sense, although having been in some tuned examples it was a lot of fun

Corrado G60? It's supercharged rather than turbocharged but mine was so much fun.

Probably my most fun car is also one of the slowest.

Mk2 fiesta 1.1,with 155x13 tyres. Max speed 90 ish.
Was driven absolutely flat out at any reasonable opportunity, I have fond memories of dicing with golf gti,capri 2.8 etc. Of course I lost nearly every time,but whereas all they had to do was put their foot down,I'd have to make perfect gearchanges,cornering on the limit,try to read the traffic when I lost ground etc. Much more satisfying!

And the balance of your £3k budget goes on tyres/fuel/welding.

E30 BMW. There's a mint 2 door, early chrome bumper on Facebook today. Spent the rest dropping in an m52/2.8 engine and it'll be a blast. You won't lose money on it down the line either.

Alternatively, buy a 106 Xsi or 205 Gti if you prefer wrong wheel drive.
