On that basis, £750-800 is where I'd be, considering the prices from trade resellers on the usual places online.
There's one on eBay for £835 – minus the 10% fee, he'd see £750, and even then I wouldn't, as some of the black PVD is worn.
Hard to say for sure without seeing images, but at the end of the day, anything is worth only whatever someone's prepared to pay – so go with what you feel it's worth.
Given the age, I'd be factoring in that the Valjoux 7750 is likely to be needing a service shortly – check both the Sinn/service agent price, and that of a few independents.
From the dark recesses of my mind, I've a figure of £300-ish floating about, since a chrono is more expensive than a three-hander 2824/2892.

Most likely – but then if that's all it's worth to you, you're only being honest with him and yourself.
On the other hand, if you don't think there's much chance of picking another one up for that amount or for his price, in better condition, then you need to rethink your offer.
It all depends on how much you really want it, but not without knowing what they sell for on eBay Germany – some recently completed ones went for €900 and €960 (UTC version), which again if you could deal directly, would put them at around £630, plus postage.
Not sure if either was PVD'd, or looked in better condition.
I think, if you want it, you'll need to offer £650-675 based on being able to demonstrate what others have sold for elsewhere, inc watch forums.
Even then, not everyone will accept that as proof of why there's is overpriced in comparison, etc, and will resolutely hang in there until they do or someone else comes along who thinks it's worth more than you do.
