How much do you want to spend? Under £800, the Nikon D70 is better than the Canon 300D, but if you can stretch to just over £1k, the Canon 20D is better than the Nikon alternatives.
In reality, any of these cameras will give great results, so try them all out and see what you like the feel of most.

Do you have any lenses for a film SLR at all? If so you may wish to purchase a DSLR compatible with them.
So. Say you have three Canon lenses in your bag you'd be mad to get a Nikon D70. If you have three Nikon lenses in your bag you'd be mad to get a 300D.
For what its worth I got a D70 and am very, very happy with it. Its a far better camera than I am a photographer and is providing a great deal of amusement as I start to find out how much I don't know...

Both the 300D and D70 are an excellent entrance to the DLSR world. Both do pretty much the same thing, but in slightly different ways.
The pricing reflects the products age (and imminent replacement), in addition to construction materials (Canon - plastic, Nikon - metal). However, if you are kind to your equipment, a plastic body is absolutely fine.
The only way to decide (if you're not too fussed about spending another couple of hundred pounds) is to go to a shop and have a play with both at the same time. The controls (apart from the actual shutter release) are set out differently, and you will find one definitely easier to use, handle and get on with more than the other, and that should be the one you buy.
If you don't want to spend the extra, you get the Canon, and the picture quality will be just as good.
If you've already got lenses that fully work on a DLSR, then that should have an overriding influence on your purchase, so long as they are good lenses.

Do you know what? I find the same! I am always trying to close the gap.
The biggest problem I find is exposure latitude (ie highlights burning out) but that's the same for all I think - unless you spend £Ks.
If you already have that then definitly go for another Canon. You can use your current lenses plus all the controls are similar and in the same places.
The 20D is a lot more appealing than the 300D and is more rugged to boot (not that I would want to kick it!).
I'll sell the lens in the new year so will bring it to a meet some time in Jan/Feb.
