Bang for buck sub £7k second car

Been lurking on here for a while and thought I'd ask your thoughts.
I currently have a 325ci, soon to be replaced with an e46 m3 for daily use.
I also have a Toyota MR2 Rev3 turbo, tuned to over 300bhp and use it just for fun. It's super fast, a great drive but as much as I love it, I am thinking of getting something different as a second car.
I don't want to spend more than £7-8k, but want it purely to put a huge smile on my face.
I'm not bothered about age, mpg, mileage, number of seats... just want something a bit special.
Performance is important and ideally I would like a car where someone has done the expensive, important and costly mods.
I've learned over the years that if I'm going to have a tuned car let someone else dish out and set it up and then i'll buy with it being their loss.
I like 90's jap turbos, thinking of an american v8, possibly some kind of wild off roader? I got into green laning and pay n play off road days a few years back - probably the most fun i've had in a car!
What would you suggest. Can be completely ridiculous, but still useable all year round, so no caterhams.

Problem with the VX's is that the clamshells are spectacularly expensive and any ding could write a £7k car off.

Easily rectified with a just-over-4 kilo one though, and a quick rack with a revised casting at the same time, with revised alloy steering arms too. £7k will get you a tidy automatic twin turbo, with BPU modifications. It will be in the region of 380-400hp, and is a very fast, reliable car for little outlay.
Or if you would prefer something German...
£7k is enough for a tidy R129 SL500

As with the Supra, you get legendary build quality. Not as tunable as the Supra, but it has over 300hp to start with, and a beautiful V8 soundtrack if fitted with an aftermarket exhaust.
