Employment opportunities in Hertfordshire

Hi everyone,
I posted before on here regarding employment in the chemistry industry, as my current contract is due to finish in december and whilst enquiries are being made to scope out the possibility of extending that further (at the risk of blowing my own trumpet, I have been informed from a few people here at work that I am well respected due to the amount of work I have done and the results I have achieved).
I have been looking very closely at the job market over the past month, and there are very few jobs available that would be suitable for me as a chemist with a good 1st class degree and a PhD in organic chemistry. I did have an interview with a company in Cambridge, but didn't get offered the job (I knew I wouldn't as I didn't have the experience they required, but went along for the opportunity).
So, I want to broaden my job search to encompass other areas which I can apply my skills and knowledge (either as a chemist or a downright and dirty scientist!) to a good job. I'm not fussed about what I do, it doesnt have to be scientific in a sense but I would like something that keeps me active.
I've thought about jobs with the government environmental agency (no vacancies suitable) and the forestry commission (no vacancies suitable). Roles in these places could see my chemistry and scientific knowledge applied to monitoring the environment e.g. water quality, soil quality, so on. I could also take on some other role involving planning and organization, where a pro-active individual is required.
I am worried about my future. My wife has a permanent job but I dont want to place all the financial responsibility upon her, I want to earn my own money while doing a good job.
Advice?
[edit] - I wouldn't be adverse to re-educating myself. I have a strong interest in vehicles, and in engineering in general. What's the job market like for these areas?
