Quick Tyre Advice Please

Currently fixing up the Stanton by replacing a broken XT shifter, nakered pedals (going for Shimano Saint as they look decent and a bit of an upgrade over the current V8s) and fancy some new tyres but have been out of riding for long enough that I'm not sure what's good.
I ride trail centres, bit of DH, bit of bmx track (I know that's an odd combo) and would like something that does all of it really. Ultimately I'd like to edge towards on grippy and planted on fast DHs rather than fast and fluid up hills as that's what I enjoy most, and I'm not really fussed if I'm slow up. As far as the bmx stuff is concerened, I'd imagine I won't get a tyre suited for this, so I'll just have to pump it up to max PSI to get the rolling speed.
