As you can gather, I'm not the most technical of people when it comes to tinkering with PCs. I'm toying with sticking one of these
in my PC to help speed things up for when I (hopefully) get my hands on an mp3 jukebox - really don't want to have to transfer 12gb of mp3s over a USB 1.1 connection...

Is it as simple as opening the PC up, sticking this into one of the empty slots, updating the drivers and hey presto?

You didn't mention waht operating system you have, but Yes - although read the instructions carefully re the sequence of physically installing the device and loading the software that drives it.

Edited to add comment about being sure to unplug the power and of course earth yourself to avoid any static as you plant the new card into the system.

Win XP Pro.

From what I've read, it would seem you have to install the software/drivers first, then install the card, reboot
and let the hardware wizard sort it out.
