Anyone know a good instructor who can teach me how to get the most out of my car?

I've done a few different ones and driven Millbrook where AM do the PDC
I found these guys to be very very good.
More focused on improving your abilities rather than the car
(the car is more than capable wink )

Andy Walsh is a Leg End IME

I found the Millbrook PDC very useful as a prelude to a track day (we did Spa).

If you don't have any luck with the recommendations so far PM me and I wil put you in touch with an AM instructor (he is freelance and you can hire him for the day to accompany you to a circuit).

I found the Advanced Road and Track course with Colin Hoad from C.A.T driver training who is based at Millbrook extremely useful.

I was going to suggest the Driver Development Programme, run by Carolyn Barker:

http://www.driverdp.com/

I've done it a couple of times, once in an M3 and once (last year) in my V8V. However, I've just checked the website and the venue where it was held (the Prodrive Proving Ground at Honiley) has been sold. So the DDP has been put on hold for the time being.
