I'm seeing more and more videos from DJI's Phantom drones around, but it seems quite common to catch the leg of the drone, or the rotors in shot.

Is this because the person flying needs to be a little more gentle on the controls, or is there more to it than that?

It depends on how the gimbal is set up. With mine (Phantom Vision with rotorpixel gimbal) I only get a tiny bit of rotors at the top of the image if I am thrashing it.

Purchased such a drone last week. I've caught the rotors a few times, but only when pushing it to it's extremes. If it's used smoothly then you're unlikely to catch them, in shot.

Got a DJI Phantom 2 a few months ago. Really pleased with it. I broke blade with a poor landing. Switched to carbon blades which are obviously a lot sturdier, and provide more lift/speed. Also the carbon blades do not flex with updraft on landing, more stable landings. WARNING - you probably want to avoid catching your DJI with carbon blades, liable to lose a finger(s) if you get it wrong.

I've only been out with mine 3 times so far and I'm terrified of having a crash! I've ventured up to about 200ft so far.

Also started playing with Premiere Pro to edit my videos.

This was my first effort:
