Cooking tonight and the wife fancied beef stew and dumplings.

Does anyone have a really good recepie? I'd like to make it really special if possible (I'm a huge fan of dumplings)

Secret ingredient for amazing beef stew is anchovies. They make it really good. Don't worry if you don't like anchovies, they won't make it taste of them, they just give it a "savoury" kick (umami).

I use a slow cooker (less than £15 from Aldi) and just load it up with vegetables & beef before work. Literally come home, put the dumplings on the top and finish off in the oven for 30 mins.

Sainsbury do several dumpling mixes, where you just add water, plus they taste every bit as good as making mix from scratch.

Flour and season your beef and seal it off in a pan. Doing this in batches will get you a better colour.

Remove the meat and put your mix of peeled and chopped root vegetables in the same pan and fry off until it all goes a bit soft and the outer skin is roughed up.

De-glaze the pan if its not the same one that you will be making the stew in.

Add the meat to the veg and cover in stock and Red wine or Port depending on prefrence and bring to the boil.

Once boiling then turn down and simmer for 3-4 hours.

Whilst the stew is simmering make some suet dumplings according to the recipe on the side of the packet( Atora Suet. You may want to add seasoning and herbs and add to the stew.

Teaspoon or two of creamed horseradish into the dumpling mix.

Beef stew and dumplings is planned for tomorrow....
My dumplings will be made with a fair amount of chives plus a touch of rosemary.

Thanks all - got all the ingredients and sorting it out while watching te Rugby.

Good call on the Port - though I've had a couple if glasses and am in two minds red wine or Port (I LOVE Port and generally finish off the bottle)

Add red wine, bur only if it's red wine that you would be prepared to drink.

Went for red wine - polishing off the port smile. We don't have any wine in the house which we'd not want to drink( always buy when on deal in big bulk - or that's how I get away with buying it when the mrs is there
