The thing is, if you ate a completely cholesterol free diet, you might still have high cholesterol levels, because your body needs it, and makes it. Some people have a genetic disposition to make too much. Pretty much all my family have high levels, supposedly due to such a disposition.Have a read at this:

Indian vegetarian is the way to go for low cholesterol meals which are also tasty and interesting.
Madhur Jaffrey has a new book out, which is certainly on my Christmas list. She was interviewed on Radio 4 a while back eulogising about it (funnily enough) but made the (IMHO) very valid point that Indian vegetarian food is the best in the world, since they've had a few thousand years in which to perfect it.
Classic Indian recipes can load on the ghee, but I find that cold-pressed virgin rapeseed oil works very well as a substitute due to its 'mustardiness'.

If even Ancel Keys can admit that the 'Cholesterol Hypothesis' is wrong I think the rest of us should accept it. There is cholesterol in animal fats but does not lead to high blood cholesterol, which does not lead to heart disease. Your digestive system breaks everything down and then the body builds what it needs. Your blood cholesterol is produced by your liver. In far greater quantities than you ever ate. And in fact this is done in response to eating carbohydrates.Total cholesterol is pretty meaningless on its own, you need to check HDL, LDL, VLDL, and triglycerides to see what is happening.
OP, I would suggest removing alcohol, sugar, and flour instead. You can read more about this in e.g. Taubes "Why we get fat" or Kendrick's "The great cholesterol con".
