I'm looking for ideas for vegetable side dishes for Christmas (or any time really). Rather than just plonking the veg in the steamer, does anyone have any nice recipes they can recommend?

Had our christmas lunch on Friday, and had a side dish of Bok Choy, which is known as chinese cabbage. Was simply cooked in soy sauce and ginger and was REALLLY good.

Waitrose sweet potato and parsnip in cheese sauce is bloody amazing, sure it could be replicated at home.

Finely chop some red onion and leave it to soak in some balsamic vinegar for an hour. Whilst it's soaking cut some Savoy cabbage into half inch strips and steam it until almost cooked.

Get a large frying pan medium hot and add a small amount of olive oil and a knob of butter. Then add the onions and fry until they start to go soft. Then add the steamed cabbage and cook for another couple of minutes.

Slow roasted whole heads of cauliflower or broccoli, and even celeriac. The slightly charred flavour enhances what's already there. Watch the temp though.

I love balsamic onions but never tried them with cabbage, nice one I'll give it a try thumbup

Chopped leaks fried with butter and bacon with a little garlic is lovely.

Try getting purple and white carrots and roast these for an hour or so. Goes lovely and sweet.

Sauteed Brussels. Sprouts clove of garlic, seasoning, nutmeg, chopped walnuts, veg stock (4tbs) and Parmesan. Slice sprouts, cook in oil with garlic seasoning, nutmeg for 2 mins add stock tablespoon at a time. Cook until sprouts are crisp and tender? (how something can be crisp and tender I don't know) Stir in nuts and top with cheese.

Garlic roasted brocolli. Brocolli tossed in olive oil and garlic roasted.

My all time favorite and one I still can't believe how good it is. Leeks and mushrooms slowly fried together. The taste of the two together is beyond belief.
