Looking to purchase over the next couple of weeks somewhere in the region of 300-400 price range.
Would like something suitable for a beginner but useable/expandable as i progress and get better.
Looking for something that will take a range of subjects from cars to nature etc
It's pretty much the case these days that every DSLR you can buy is perfectly well suited to just about anything you can throw at it. Paying more money doesn't generally buy improved picture quality, it buys build quality and a range of professional features that most users will never want or need.Would like something suitable for a beginner but useable/expandable as i progress and get better.

I'd suggest going to a friendly camera shop (a proper one, with people who know their stuff, not Currys etc) and trying a few. Normally that means comparing the various offerings from Nikon and Canon, though other manufacturers do make DSLR's. When you've chosen, do the shop a favour and buy from them. Chances are you'll pay a little more, but it's worth it for the advice they'll give.
If you want a recommendation from a Nikon user, I'd say a D3200 with the 18-55mm kit lens is a perfect place to start: http://www.amazon.co.uk/Nikon-D3200-Digital-Camera...
For a beginner on a budget, they can all take good photos.
Best thing you can do is try to get the best camera up in the range you can for the money you want to spend. Look around for offers and deals on sites like camerapricebuster and hotukdeals.
You wont know what specific features you want until you have been taking photos for a while so just get the best one you can afford and then just use it.

Might be an idea to buy a used camera which may better suit your needs and budget, try http://www.mpbphotographic.co.uk/ whom specialise in used cameras and seem to have a good reputation, or perhaps http://www.wexphotographic.com/ who sell new and used camera equipment and seem to know their stuff.
Ought to mention I've had no dealings with these companies (apart from buying a battery from Wex for my camera) and am not in any way affiliated with them, have just read on numerous occasions on several websites and forums just how good they are.
