Hey all!

Got a whole beef tenderloin to cook tomorrow (Christmas Day) - is there anything I can do to make it a bit special?

Right now I'm thinking salt and pepper, sear in pan, then into oven around 180 until internal temp is around 55, take out and rest. Thoughts?

How about a beef en croute? Or wellingtons? Or take the Jamie Oliver approach and chop rosemary sprinkle on a board with salt and pepper, roll the beef in it, brown it off in a pan then in to the oven.

Only answer is to fast sear in a pan, heavily season and bang in a medium oven for ten minutes then rest for 10 and carve.

What weight do you have, a whole fillet is wasted on less than 8 people.

Past the event I know, but another answer is to fast sear in a pan and then oven cook at low temperature (80C) for maybe an hour / hour + 15 until 55C (rare) / 60C (medium) - you will need a remote probe but it does come out perfectly cooked and tender and doesn't need resting.

Picked up low temperature roasting up from Donald Russell and am a real fan now. Fillet is just incredible this way but you can most "steak" cuts.

Added rosemary which wasn't initially in the plan, then somewhat followed Tony's instructions (took a little longer in an overloaded oven than 10 mins) which led to a perfect medium rare fillet. Went down a treat with everyone at the table, thanks for the advice.
