I was going to cook this for christmas dinner but went on a 2 day bender instead so its still in the fridge uncooked laugh

I really hate wasting food and it needs using tomorrow. I'm thinking use it for a curry as most of whatever I make won't get eaten before being wasted again, and I can easily freeze the curry.

What other options do I have outside of curry ? I just want to do one thing with all of it rather than half a dozen different things

Roast it and then dice it up when cold and freeze portions of the meat ready for use in any recipe that you need chicken/turkey for. You could also slice some for sandwiches

Agree with Sherman. I've frozen chunks of our christmas leftovers, works well in pies (with leek or mushrooms) as well as curries.

Or our standby for leftover chicken but using turkey in a turkey and bacon casserole. Onion, diced carrot, celery, soften. Fry off some bacon till a bit crispy. Fry off some cooked turkey in the bacon fat. De glaze with chicken stock.
Bung into casserole dish. Oven 180 for 45 mins or nicely bubbling.

Split up into portions in freezer containers. Freeze and you have a number of tasty meals ready for those nights when you're pushed. While it's reheating you can sort out some veggies.

I tried to go Thai but the shop was out of limes. They didn't have any baby corn either (may replace that with normal frozen corn).




I'm not sure how it'll turn out with no lime. And given the fact its getting late and nothing else I bought today would get wasted, I'm seriously considering just boil the thing and feed it to the dogs frown
