I'm going to look at a car that the MOT has lapsed on. It's currently sorn. I will insure it but I don't think I can tax it without an MOT. Is my only option to drive it straight to an MOT station and leave it there to get any work it may require done? Can I take it home to do the work if it's parked off the road then take it back to the MOT testing station? I assume as soon as I have an valid MOT I can just tax online?

Usual rules apply, same as they always have.

You can drive it to/from a pre-booked test, or pre-booked repairs, without an MOT or tax. But it must still be roadworthy.

Just search on here for topics along the lines of 'pre-booked MOT' and you will get THOUSANDS and THOUSANDS of opinions.

with a lapsed MOT, you can drive an untaxed car to and from a pre booked MOT (unless it passes, then you can't drive it home)
with a lapsed and failed MOT, you can also drive untaxed to and from a pre booked place of repair if it is to have the MOT work done.

Subject to that "roadworthy" caveat.
