Can I use engine cleaner and deagreaser instead of wax and grease remove just before spray painting ? Is it the same staf?

Unlikely. Use proper panel wipe followed by a tack cloth.

Use GUNK it'll get rid of any grease, then use a detergent (Fairy Liquid)

Fairy liquid is no good for this. It contains glycerine which leaves a greasy deposit (or soft hands, depending on where you use it...)
