My favourite from the states costs too much to ship and the stuff you get over here is too expensive and not very good.

I've got a dryer and fancy making my own.

Anybody done this, if so any tips or recipes.

I make biltong in a homemade dryer.

Not sure if that a biltong recipe would give you the flavour you're after.

Decent meat to start - recommend Silverside.
Buy some cider vinegar and some spice. I recommend this : http://www.biltongbox.com/shop/index.php?act=viewP...
Soak in the vinegar, pat dry.
Cover in the spice.
Wait approx three days.

Eat it all in one go.
Wake up in the night gasping for water.

Biltong or jerky love it all.

I'll get some of that

Looking around the net I'm thinking of trying , soy, Worcestershire, and various spices in bag over night then in the dryer.

What will be difficult will be to get strips 1/4 in thick and consistent.

I've since purchased a meat slicer and a proper dehydrated which makes things easier, you still never have enough though sadly

That's pretty much exactly what I've just done. But like an idiot not knowing the difference I used onion salt and garlic salt.
+1 tbs chilli flake
1tbs cayenne
1tbs chipotle powder.

I'll see what it's like tomorrow. 4 hours in the thing should do. I only had a couple of bits of steak so chopped it into bits and it's in the fridge over night.

I've done it before.

Marinaded in whatever I thew together and then into my offset smoker BBQ.

No coal but an electric fan blowing through and the lid closed to keep the wasps off biggrin

Why didn't I get off my lazy ass earlier . Best stuff ever but omg the salt. Nearly inedible but not nearly enough.


Gone and bought a slicer and just stuck loads in to marinade but without the salt.

This stuff went in seconds

Blimey, you need to start buying some bigger chunks of meat - that's about what I have as a pre-jerky appetizer biggrin

Marinade it for as long as you can, basically. I use apple cider vinegar and a store-bought seasoning. Get the biggest salt grains you can too, you could grit the paths with the stuff I use.

It's was all I had last night.

Don't worry about 6 pounds worth in the fridge now being done

I slow dry mine over about 2 - 3 days.

4-5 hours in the dehydrator at 155f

Came out just nice.

I have done some in my oven. Took about 48 hours at 40 degrees. Tasty but not sure it's very cost effective taking that long.

Marinated for about 24 hours in a chilli, garlic, ginger, palm sugar, soy & lime mix.

If anyone is in the manchester area and wants a dryer thingy, my ex left it here when we broke up.

It's been used maybe 5 times and she was always happy with the results.

Free to a good home, or bad home.

Does it need to have sugar in it? I find the shop bought stuff super sweet.

On a side note have any of you ever made pemmican?

I havnt been putting any sugar in because I'm trying to stay away from carbs as much as I can.

The first batch tasted great apart from too much salt but I think that was because of the cayenne and chillies. Would probably be a bit boring without those and sugar.


I'm going to experiment with other spices I may put a little agave syrup or honey at some point.

I chucked a bottle of dark beer in my last batch, any one else got any decent recipes? It always tastes a bit too strongly of soy sauce but nice all the same
