I make a dressing using mustard, lime juice, sugar, balsamic and oil. I keep it in the fridge and whilst it separates a bit and goes thick, after warming up and shaking it seems fine. Kept one for about 2 weeks and seemed fine. I'd like to put some in a bottle to give to somebody. It will be a Kilner swing top bottle which seals tightly and kept refrigerated - how long will it be safe to use?

I'd have thought quite a long time as by themselves, each ingredient would last a long time but want to be sure!

Yep, should last for ages (months) if kept refrigerated. Basically as long as it smells ok, it'll be fine.

I keep mine in the fridge for a few days...the ones containing lemon juice or vinegar will keep for longer?

Commercial dressings last longer because they are made to do that, and have stablising agents and preservatives to keep their shelf life.

Sometimes, when I'm making up a dressing, I wonder why I don't buy one, but then after I've made it I remember why - the homemade ones taste so much better. And you can make whatever flavour you like (and it's cheaper too). smile

600g vegetable oil
150g white wine vinegar
25g Dijon mustard
15g Pureed garlic
3g Salt
1g Cracked pepper
2g Herbes de Provance
3g Sugar

Bung everything EXCEPT the oil in a processor then slowly add the oil until your get a thick (mayo style) dressing.

Keeps for a few weeks in the fridge or if you use garlic powder pretty much indefinitely.

Quick and easy (less than two minutes to make): 1 tablespoon of white wine vinegar, 3 tablespoons of extra virgin olive oil, half a teaspoon of dijon mustard and salt and pepper - shaken up in a jar.
