They are out there. In addition, some that have had modifications can be returned to standard easily. We had cutouts on our old one, but put a new pair of standard silencers on when the car was sold. It did have an uprated ARB fitted to the front, which could easily be changed bach, and we did put aftermarket shocks on it, but it was still on standard springs so standard ride height.
from the factory or showroom I have a standard 2004 Monaro VXR. Just missing and engine, gearbox, exhaust and interior.

My HSV GTS VT2 has a few bits swapped out due to the originals being past it (exhaust, brakes, etc). I think as these cars age it becomes much harder to retain the all OEM specification.

Japanese sports cars aside, I can't think of many cars that respond better to a few choice mod's.
Consdier AMG merc, Audi RS and BMW M cars.... you can personalise them but if you start modding you're only likely to make it worse. In their defence they tend to go, stop and sound good from the factory

Not many are left completely std by now as Monaros are at least 8 yrs old and after a few owners someone is bound to have done something in that time.
there are probably more std VXR8s than Monaros out there, as less mods required on the VXR8
I have chalk and cheese here at the moment, a 6.0 VXR - completely factory std and a 6.0 VXR with £15k+ mods inc S/C
