The previous owner must have had the same issue give them a call. In any other car that would be "limp wrist mode". Is the MIL light on (bottom right of the dash)?
Even if not:
It might be worth resetting the ECU. It is in the passenger footwell, behind the kick board, to the left of the battery. Ignition off, simply disconnect it, wait a minute and reconnect it. Then start and wait for the car to re-learn its settings. You cannot hurt anything so long as the ignition is off.

Sounds like you've got a lack of fuel or air.
Try running it without the inlet hose connected to the AFM and see if there is any impovement.
If you can rig up a fuel pressure gauge to the fuel rail, readable during a test run, then this may point you in the right direction. It won't help with injector/batch fire issues though.

I agree, to me it sounds like fuel starvation. I had symptoms like this once on a Golf GTI and the fuel pump failed shortly after. Try running it without the inlet hose connected to the AFM and see if there is any impovement.

When your revving it at a standstill it doesn't require as much fuel as when under load.
