If you ever pick up roadkill you need to "clean" it *immediately* to avoid contamination of the meat by the innards - sure to have been ruptured by the internal injury.
And only collect roadkill you killed yourself...

Personally I like my pheasant hot-roasted.
Take your freshly cleaned pheasant, wash and pat dry. Take a non-stick pan and heat until hot. Whilst pan heating pre-heat oven until very hot.
Then dry fry the pheasant to brown it all over. I like to through garlic salt and thyme into the pan so it coats the pheasant at this point.
Then transfer the pheasant to the HOT oven. Twenty minutes later it'll be done. And you'll need steak knives to eat it....but it should still be moist and (relatively) tender...
