Hi all,

I have this cracking big rib eye on the bone to cook. Dug it out of the freezer to cheer me up - uni exams this week! The other side has not been faced off, and it's very well aged!



I'm not sure how best to cook it though, haven't cooked a steak this big on the bone for a long time, and don't want to waste it - a rare treat for me!

What would you recommend? It's 400g.

Salt, sear quickly on all sides in a very hot pan. In the oven at 50C for about an hour or 2. Rest for around 45 minutes and then finish with butter.

In the absence of probes and baths etc etc this sounds like the best plan.

how thick is it?

An hour in the oven seems like a pretty long time, I'd probably be searing the fat, then 5 mins each side, then about 15-20 in the oven?

This for a normal rib eye steak? Why wouldn't you just cook it as you would a normal steak?

Surely after an hour or two it'll be dried out?

It's 3-4cm thick.

Just want the best results really, so thought i'd take some advice.

I don't get to cook steak often!

The clue is in the temperature. 50C will not dry it out at all. It will cook to a point just above rare and go no further.

I had one like that at the weekend. Our kitchen is in the middle of being replaced and all I had access to was a grill. Chucked it under there for about 6 mins a side and it was lovely!

Roasting hot pan and about 3-5 minutes a side. Dont touch it apart from to turn it over.

Rest it on a warmed plate for another 5 minutes. Put some tin foil over it so it doesnt cool too much and then serve.
