Beef Short Rib..What to do?

Tom Kerridge and his 3-day BBQ short ribs. Thankfully most of the work is done while you're sleeping!
I think they are way too good for chilli. They are seriously rich and very meaty. I slow cook them covered in foil with salt and pepper first off, that way you can pour the fat off for roast potatoes later. Then knock up a BBQ sauce to glaze them with for the last hour or so, helps cut through the richness a bit. I don’t put rub on at the start when cooked in the oven (though would on a BBQ) so I can reuse the fat.
Alternatively slow cooking in stock / wine etc. is good but let the cooking liquid cool so you can skim off the fat as they lose an awful lot!

I had some friends round and inspired by a Jamie Oliver Osso Bucco recipe which uses veal shank slices instead, cooked them in the oven for a few hours in the oven.
The meat fell off the bone, the sauce was amazing, although I skimmed what seemed like a litre of fat off the top of the stew.
Went down extremely well.
