Currently have a custom 3"single pipe cat back coming off of de-catted Hsv headers, doesn't seem right having 1 pipe at the back of a v8, what are my options? Can put a pipe either side at at the rear as fuel tank not an issue, a standard (extended) vxr pipe may be an option?

Can be done, but to make it match up, you will need to notch the rear cross member as well as cut a section of bumper out.
